Gas Mark ¼ = 110 °C / 225 °F (very slow). Mark ½ = 120 °C / 250 °F. Mark 1 = 140 °C / 275 °F (slow). Mark 2 = 150 °C / 300 °F. Mark 3 = 160 °C / 325 °F (moderately slow). Mark 4 = 180 °C / 350 °F (moderate, standard baking). Mark 5 = 190 °C / 375 °F. Mark 6 = 200 °C / 400 °F (moderately hot). Mark 7 = 220 °C / 425 °F (hot, pizza). Mark 8 = 230 °C / 450 °F (very hot). Mark 9 = 240 °C / 475 °F (extremely hot). Fan-assisted ovens typically run 20 °C cooler than the labelled gas mark — drop the temperature by one mark, or check the recipe for a fan setting.

Slow-cook stew: 140–150 °C / 275–300 °F. Bread (lean): 220–230 °C / 425–450 °F. Bread (enriched): 180–190 °C / 350–375 °F. Cookies: 175–190 °C / 350–375 °F. Cakes: 170–180 °C / 325–350 °F. Roast chicken: 180–200 °C / 350–400 °F. Pizza: 220–250 °C / 425–480 °F (or as hot as your home oven goes). Caramelisation begins around 160 °C / 320 °F, the Maillard reaction picks up speed above 140 °C / 285 °F.
