Gas Mark to Celsius / Fahrenheit conversion chart

Gas Mark ¼ = 110 °C / 225 °F (very slow). Mark ½ = 120 °C / 250 °F. Mark 1 = 140 °C / 275 °F (slow). Mark 2 = 150 °C / 300 °F. Mark 3 = 160 °C / 325 °F (moderately slow). Mark 4 = 180 °C / 350 °F (moderate, standard baking). Mark 5 = 190 °C / 375 °F. Mark 6 = 200 °C / 400 °F (moderately hot). Mark 7 = 220 °C / 425 °F (hot, pizza). Mark 8 = 230 °C / 450 °F (very hot). Common cooking temperature anchors

Slow-cook stew: 140–150 °C / 275–300 °F. Bread (lean): 220–230 °C / 425–450 °F. Bread (enriched): 180–190 °C / 350–375 °F. Cookies: 175–190 °C / 350–375 °F. Cakes: 170–180 °C / 325–350 °F. Roast chicken: 180–200 °C / 350–400 °F. Pizza: 220–250 °C / 425–480 °F (or as hot as your home oven goes). Caramelisation begins around 160 °C / 320 °F, the Maillard reaction picks up speed above 140 °C / 285 °F.

Celsius (°C)

Celsius is the metric temperature scale where the freezing point of water at standard atmospheric pressure is defined as 0 °C and the boiling point as 100 °C. Introduced by Anders Celsius in 1742 (originally with the scale inverted), it is now the everyday unit in nearly every country, in scientific notation alongside Kelvin, and the dominant unit for weather forecasts outside the US.

Fahrenheit (°F)

Fahrenheit is the imperial temperature scale used in everyday life in the United States, where water freezes at 32 °F and boils at 212 °F. Introduced by Daniel Gabriel Fahrenheit in 1724, the scale was originally calibrated against a brine ice mixture and human body temperature. Convert with F = C × 9/5 + 32 or C = (F − 32) × 5/9.

Gas Mark (UK)

Gas Mark is a British oven-temperature scale used on gas ovens and in older UK cookbooks. The marks are labelled ¼, ½, 1 through 9, where Mark 1 ≈ 140 °C / 275 °F and Mark 9 ≈ 240 °C / 475 °F, with each step roughly 14 °C (25 °F) apart. Modern UK fan and electric ovens typically display Celsius, but recipes from the 20th century still use gas marks.
